In Roanne for three generations, Troisgros could only be a provincial dynasty of top class restaurant owners, but in fact they are a great family of chefs who practice remarkable gastronomy situated between the Forez region, Japan and Italy. They have a taste for contemporary decoration which is absolutely amazing.

At the beginning there was Jean-Baptiste, the grandfather, already formidably gifted and who made the restaurant, opposite the railway station, a table which was worth the voyage.
Then there were Pierre and Jean, who made the salmon with sorrel a part of anthology and, when Jean died, Michel, the son of Pierre was given the keys of the house, without the least restriction.
This jovial fellow who continues to represent Troisgros throughout the world testifies of a rare broadmindedness.

Not only he has accepted the idea of a contemporary orientation for the family house, but he has adopted the style with great conviction, including his own personal tastes. And concerning the couple Michel and Marie-Pierre, they are an astonishingly modern couple and make the whole world come to Roanne.

They propose dishes of Japanese inspiration, containing exotic products, sometimes confidential, but by also sublimating those of the Forez area, cradle of the family, and by mixing the Italian inspirations of the grandmother.
Essentially, a cuisine of journeys, as Michel Troisgros himself defines it. Just beside the restaurant, Marie-Pierre Troisgros has imagined the Central, in 1995, which is much more than an annexe and counts from now on in the roannais gastronomic landscape; a shop which proposes more than eighty kinds of breads, Viennese pastries and buns, cooked dishes, exceptional products which one can find in Japan, in the Odakyu stores where Michel goes several times a year. Jean-Baptiste Troisgros would certainly not be able to recognize the house, but nevertheless in no way he would disavow it.

Since mid-September 2006, a Michel Troisgros restaurant has been opened in Tokyo in the setting of the Hyatt hotel.
