Montoison Melon with red fruits

The Melon of Montoison is perhaps less well known than its neighbour from Cavaillon, but it is very appreciated by amateurs and well present on the markets of the Drôme.

Preparation: ¼ of hour.

No cooking.

 

For 4 people

½ melon de Montoison - 3 apricots - 100 g of raspberries - 100 g of currants - Juice of 2 oranges and half-lemon - cane sugar.

 

Divide the melon in two parts. Remove the seeds. Form little balls with a special spoon. Put them in a salad bowl. Dice the apricots. Put the currant berries in the salad bowl together with the diced apricot and the melon balls. Add the juice of the lemons and oranges and the sugar diluted in 30cl of water. Protect with food film and keep in the fridge for two hours. Add the raspberries just before serving.
