Quenelles and soup bars, furiously trendy!

High on the list of cooking to be reckoned with, and which has made the gastronomic reputation of Lyon, there is the famous quenelles of pike, poultry or simply plain. At Giraudet's, an old establishment, they have really evolved and have even been used in surprising soups.

It is the wind of modernity that has blown through the respectable Maison Giraudet, located in Bourg en Bresse since 1910, and specialist of the quenelle.

The chef Michel Porfido spends all his time at the moment inventing new soups which move with the current trend and which can be enjoyed at the famous soup bars where good snacks can be found. 

 

Completely in the trend and adapted to current tastes, Giraudet's soups follow the seasons and are collectors' pieces!

Alongside the green asparagus soup, pea soup, sweet chestnuts or lentils, one could discover, at Christmas, pumpkin soup with gingerbread and a selection of cream of mushroom soups.

 

In spring, you can enjoy a soup of French beans and cumin, corn soup with hot peppers from Espelette (baptized «grimace soup» but delicious nonetheless) and also a new recipe; sardine and coriander soup.

It is also the season of fruit soups, such as apricot and almonds with lavender, which is the base of cocktails baptized Smoothies and into which one can add fresh milk or coconut milk, ice cubes, fresh fruit...

 

However, the Maison Giraudet has not confined quenelles to their exclusive tradition. From the base preparation of durum wheat semolina, eggs and butter elaborated by Joseph Moyne in 1880, the chef has imagined quenelles of rye, gaudes (from roasted corn), sweet chestnuts and this surprising green quasi-quenelle, mixed with spinach and which can be enjoyed, like all the others, simply poached, fried, as accompaniment of a soup, a salad or simply as they are.
